8 oz capellini pasta
1/2 c. chicken broth
1/2 stick + 3 T. Butter divided
1/4 c. olive oil
1/2 c. thin diagonal cut carrots
1 rib celery sliced thin
2 lg cloves garlic, minced
2 lg shallots, minced
1 c. fresh shitake mushrooms, sliced
1/4 c. green onion cut in 1/4" pcs
1/4 c. chopped walnuts
1/2 tsp. red pepper flakes
1 1/2 tsp. kosher salt
1 tsp. fresh cracked pepper
1/2 c. seasoned dry bread crumbs
3 T. grated Parmesan cheese
24 shrimp peeled, deveined
4 wooden skewers
1/2 c. shredded assiago cheese (divided)

Cook pasta al dente, drain & keep warm.
In large non-stick skillet combine oil, 1/4 c. butter. Add all veggies, nuts, salt, red & black pepper and cook on high heat until just tender. Add broth and reduce heat.
Melt remaining butter in small pot.
Mix bread crumbs & Parmesan in bowl.
Dip shrimp in melted butter and coat with crumb mixture. Thread onto wooden skewers. Broil 5 -6 min. per side turning to cook evenly.
Add pasta to veggies and stir to mix. Place servings on plates and add shrimp. Sprinkle with assiago cheese.
