1 Tbsp. melted bitter
1/2 medium chopped onion
1/4 cup melted butter
1/4 cup flour
2 cups half and half cream
1/2 lb. fresh broccoli, chopped
1 cup carrots, julienned
1/4 tsp nutmeg
8 oz. extra sharp cheddar, shredded
2 cups chicken stock
2 tsp minces garlic

Directions:

Sauté onion in 1 Tbsp. butter. Cook melted butter, garlic, and flour, whisking over medium heat for 3 - 5 minutes, stirring constantly. Then add the half and half, stirring until slightly thickened. Next, add the chicken stock and simmer for 20 minutes. Finally, add the broccoli, carrots, and onions. Simmer over low heat for 20 - 25 minutes or until vegetables are tender. Add the shredded cheddar and season to taste. Stir in the nutmeg just before serving. Serve with crusty bread.
