Olive oil

VEGETABLES
onions, chopped
garlic, minced or pressed
peppers, chopped
celery, chopped
carrots, chopped

SPICES
salt
ground black pepper
garlic powder
Plus ONE of the options below:
1) Italian option
oregano
fresh parsley
OR 2) Mexican option
cumin
chili powder
cayenne powder
cilantro
OR 3) French option
Herbs de Provence
OR 4) Isreali
Za’atar* (can substitute a mix of ground thyme, sesame seeds and salt)

REST OF INGREDIENTS
boneless skinless chicken breasts and/or thighs
1 -2 large cans crushed tomatoes or diced tomatoes
1/2 bottle white wine

VARIATIONS
Optional: add spicy Italian sausages crumbled or sliced in chunks, quartered unpeeled potatoes, and extra wine or broth
Optional: add chopped Kale
Optional: serve over hot cooked egg noodles

Heat olive oil to cover bottom of pan in large Dutch oven over medium/high heat. Saute vegetables (onions, garlic, peppers, celery, carrots) sprinkling some spices over. Add chicken (and sausage if using). Sprinkle additional spices over. Pour tomatoes over. (If using Kale or potatoes, add as well). Sprinkle additional spices over. Pour wine over all. Bring to a boil.

1) Cover and reduce heat to low, and simmer 4 hours, stirring occasionally and adding additional liquid if needed.
OR
2) Cover and place in 250º to 275º oven. Bake for 4 hours, removing cover for last 1 to 2 hours.
