1 (9") baked pie crust
3 egg yolks
1 can Eagle Brand condensed milk
1/2 cup real lemon juice
1 tsp. grated lemon rind (optional)

Directions:
In medium bowl, beat egg yolks. Stir in condensed milk, lemon juice and lemon rind. Pour in baked pie crust. Top with Cool Whip or meringue.
