1 pkg - (10oz) frozen peas
1 yellow onion - finely chopped
2 1/2 C - water
1 - vegetable bouillon cube
1 tsp - dried sage leaves
2 tbsp - butter or margarine
3 tbsp - all purpose flour
1/3 C - half and half
1/3 C - whipping cream
Dash salt and pepper
1/2 C - sparkling white wine

Directions:

1. In a large saucepan, cook peas, onion, bouillion and sage in the water for about 4 minutes.
2. In a food processor or blender, puree cooked mixture. Return to saucepan. Heat until boiling.
3. In a small bowl or cup, combine butter or flour. Drop mixture into boiling soup, whisking constantly, until smooth and creamy. Add cream and half and half.
4. Season to taste with salt and pepper.
5. Just before serving add sparkling wine. Serve soup immediately in hot soup plates or bowls. If desired, add a dollop of sour cream, seasoned with a little horseradish, to each serving.
