2 tsp oil
1/2 c finely chopped onion
4 cloves garlic, minced
2 slices wheat or oatmeal bread
12 oz evaporated skim milk (separated)
1 tsp vinegar
1 egg
2 Tbsp dillweed
3/4 tsp nutmeg
3/4 tsp ginger
3/4 tsp allspice
1/2 tsp pepper
1 1/2 lb lean ground beef
1 lb ground chicken or turkey
1 Tbsp butter
2 Tbsp flour
1 beef bouillon cube
3 Tbsp dry sherry

Preheat oven to 425º. Heat oil in small skillet over medium heat. Add onion and saute about 4 minutes. Add garlic and saute 1 minute more. Mix 3/4 c evaporated milk and vinegar in large bowl. Let sit for a few minutes. Add the bread and stir, then let soak 5 minutes. Add onion, garlic and egg. In a coffee cup mix 1 Tbsp of the dill and remaining spices. Add 1 Tsp of spice mixture to bread and stir gently to combine. Add meats and mix well. Pat into loaf pan, unmold onto roasting rack in roasting pan. Reduce oven to 350º, bake meatloaf for 45 mins to 1 hour. Melt butter in saucepan, whisk in flour then 1 cup water, sherry and 3/4 cup evaporated milk and bouillon cube. Stir 6-8 minutes. Remove from heat and add 1 Tbsp dill plus remaining spice mix.
