CRUST:
1/3 cup butter
1/3 cup sugar
1 cup flour
Mix and Press into bottom of a 9 inch springform pan

FILLING:
2 - 8 ounce packages cream cheese ( light is fine)
1/2 cup sugar
2 large eggs
1 teas. Vanilla
Cream together the cream cheese and sugar. beat in eggs, one at a time, and add vanilla. Pour into unbaked crust.

TOPPING:
2 medium - large apples, cored & sliced. ( we like granny smith)
1/3 cup sugar
1/2 teas. Cinnamon
1/4 cup sliced almonds
Shake together to mix and coat apples. Arrange slices of apples in a pinwheel design over top of unbaked cheesecake. Sprinkle remaining almond/sugar mixture over top.
Bake at 450 for 10 minutes, then reduce heat to 350 and bake for 45 minutes until done. Cool and chill. This freezes well after baked.
