5 lb. or 9 large potatoes
2 pkgs. 3 oz. size cream cheese
1 c. sour cream
1 tsp. salt
1/4 tsp. white pepper
2 tdsp. butter
cheddar cheese

Directions:
Directions:
Cook pealed potatoes in salt water until tender and drain.
Mash until smooth - no lumps.
Add cream cheese, sour cream, salt, pepper, and butter.
Beat till light and fluffy.
Cool cover and place in refrigerator , use any time in 2 weeks.
to use place desired amount in greased casserole dot with butter.
Bake 350º for 30 minutes.
At end of baking sprinkle with cheddar cheese.
For individual servings I pipe into foil cupcake holders, (can be frozen until ready to use) bake as directed ( will be slightly browned on top) and sprinkle with cheese at end of baking time, put back in oven to melt cheese.
