2 lb. potatoes (about 6 med)
4 hard - cooked eggs (boiled)
1/2 to 1 medium onion (taste)
3 - 4 medium sweet pickles grated
3/4 c. Merical Whip
3/4 c. mustard
1/3 c. sugar
1 tbsp. vinegar ( white)
salt & pepper to taste

Cook whole potatoes in salt water till done but not over done.
Drain and cool, then peal and dice into 1/4" slices. Put in bowl.
Add pickles, onion and 3 eggs grated or chopped, (save one egg for garnish on top.)
In another bowl mix Merical Whip, mustard, sugar, vinegar, salt (about 1 tsp.)and pepper (about 1/2 tsp.).
Mix with a whip till creamy smooth and taste, You may need to add a little more salt and pepper or vinegar or sugar or even mustard.
You will know if it taste right or not. Remember it should have a bit and that will not be as strong once you put it on the potatoes.
Stir Merical Whip mixture into the potatoes, place in a nice bowl and slice 1 hard cooked egg in to 1/8" slices, arrange on top of potatoes and sprinkle with paprika.
