Sift together in mixer bowl:
3 cups flour
1-1/2 tsp. salt
1-1/2 tsp. soda
2 cups sugar
Add:
1-1/4 cups oil
2 eggs
2 tsp. vanilla
1/4 cup water
3 cups chopped raw apples (peeled)
1 tsp. cinnamon
1 cup chopped nuts

Chop apples pretty small - use a good cooking apple (not Delicious, for example). I usually use Galas. Bake for 45-55 minutes to make sure apples are done. Frost with Cream Cheese Icing (included)
