1 pound boneless skinless chicken breast, cut into 1-inch cubes
1 pound sausage (I use Jimmy Dean SAGE)
2 packages frozen gumbo mix, 10 oz
2 medium garlic clove (minced)
2 tbsp. all-purpose flour
2 cups chicken broth
2 cups canned crushed tomatoes
2 tsp. bay leaf, but 2 whole bay leaf preferred
½ tsp. dried thyme
¼ tsp. table salt
¼ tsp. black pepper
2 medium scallion, green part only, chopped (optional)
Hot cooked rice

Directions:
Directions:
1.In Dutch oven, brown chicken and sausage.
2.Stir in frozen vegetables and garlic. Saute until vegetables are
thawed, 5 min.
3.Sprinkle with flour. Cook 1 minute. Stir in chicken broth.
4.Stir in crushed tomato, bay leaf, thyme, salt and pepper. Simmer 5
minutes. If using whole bay leaf remove it before serving.
5.Serve over rice, garnish with scallion
Notes: really good the second day.

This really isn't a stew, but it is quick and easy. It is our comfort food. We take it to people when they are sick, home from the hospital, had a death in the family, etc. I serve it with rice. I start the rice, and by the time it is done, the Gumbo is ready.
