3 Tbs olive oil
1 large onion, cut into 1/4-inch dice
2 cloves fresh garlic, coarsely chopped
2 carrots, cut into 1/4-inch dice
2 stalks celery, cut into 1/4-inch dice
1 tsp oregano
1 tsp basil
1 tsp thyme
1 28-oz can diced tomatoes
1 10-oz box frozen chopped spinach
1/2 c red lentils
1/2 c green lentils
1/4 c barley
8 c chicken or vegetable stock, plus more for thinning
fine sea salt
black pepper

Directions:
Directions:
Heat oil in a large pot and saute onion and garlic. Add carrots, celery, oregano, basil, and thyme and cook 3 min. Add tomatoes and spinach. Stir. Add lentils, barley, and stock. Cover pot and simmer for 45 min. Add more stock as needed. Season with salt and pepper to taste.
