3 bacon strips, diced
1 small onion, chopped
1 clove minced garlic
3 Tbsp. flour
1 tsp. salt
1 tsp. dried basil
1/2 tsp. pepper
3 cups chicken broth
2 (or more) large baked potatoes, peeled and cubed
1 cup half and half
1/2 tsp. Tabasco sauce
Shredded cheddar cheese
Minced parsley

Directions:
Directions:
In large saucepan, cook bacon until crisp. Drain, reserving 1 Tbsp. drippings. Set bacon aside. Saute onion and garlic in drippings until tender. Stir in flour, salt, basil and pepper. Mix well. Gradually add broth, bring to a boil, and boil 2 minutes. Add cubed potatoes, cream and Tabasco sauce. Heat through but do not boil.

Spoon into individual bowls and garnish each with shredded cheese, bacon and parsley,
