6 tbsp. cornstarch
1 1/4 cup sugar
1/8 tsp. salt
2 cups boiling water
3 eggs
1/3 cup lemon juice
2 tbsp. grated lemon rind
1 tbsp. butter
1 (9") baked pie shell (deep)


Directions:
Directions:
Mix cornstarch, sugar and salt. Add boiling water. Stir constantly. Cook in a double boiler until mixture is thick, continuing to stir. Separate eggs and beat yolks slightly. Slowly add hot liquid to eggs yolks; add lemon juice and grated rind. Continue cooking and stirring until mixture is thick. Cool. Pour into a cooled baked pie shell; cover with meringue and bake at 325 degrees for 12-15 minutes.

Meringue:
Measure 2 tablespoons sugar for each egg white. Add 1/16 teaspoon cream of tartar per egg white to sugar. Beat egg white stiff but not dry; add sugar by the teaspoon beating thoroughly after each teaspoon is added. Continue beating until very stiff. Add 1/4 teaspoon vanilla. Stir well. Pile lightly on top and gently spread with spatula until meringue is sealed around the rim of crust. Bake at 325 degrees for 12 to 15 minutes.
