1 cup grated carrots
1 cup grated potatoes
1 cup flour
1/2 cup melted shortening
1 tsp cinnamon
1 cup sugar
1 tsp baking soda
1 tsp nutmeg
3/4 tsp salt
2 cup raisins

Directions:
Directions:
Sift flour, spices, salt and baking soda. Combine carrots, potatoes shortening and sugar. Add dry ingredients and raisins. Mix thoroughly.
Fill well-oiled cans (Can use a tin shortening can or two #3 cans. Steam 2 1/2 hours) (For shortening cans steam 3-3 1/2 hours or I pressure the #3 cans for about 1 hour in my 6 qt pressure cooker with rack on bottom.) Top with Lemon Sauce.
