1 lb. sliced bacon, diced or 1 lb. pork sausage
1 medium sweet onion, chopped
6 eggs, lightly beaten (8)
4 c. hash brown potatoes, thawed (6)
2 c. shredded Cheddar cheese (3)
1 c. small curd cottage cheese (1 1/2)
3/4 c. Swiss cheese (1)
3/4 c. sour cream (1)

Directions:
Directions:
In a large skillet, cook bacon or sausage with onion until bacon is crisp or sausage is no longer pink. In a large bowl, combine remaining ingredients; layer in meat mixture.Transfer to a greased 13x9" (11x15) baking dish. Bake uncovered at 350º F. for 35-(45)minutes or until set and bubbly. Let stand 10 minutes before cutting and serve.
