1/3 c. brown sugar
1/3 c. white sugar
1 tsp.. cinnamon
1 lb. pecans
1 egg white

Directions:

Preheat oven to 250º and spray a jellyroll pan with PAM.

Mix white sugar, brown sugar and cinnamon in small bowl. In larger bowl coat the pecans with egg white. Then pour the sugar mixture over the pecans and mix thoroughly.

Spread pecan mixture evenly in jellyroll pan and bake for 1 hour, stirring every 15 minutes. Remove from over and let cool.

The recipe can easily be doubled. The candied pecans also keep well in the freezer.
