4 cups flour (I use whole wheat)
2-1/2 cups brown sugar
4 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
4 cups grated carrots (or zucchini or combination)
1/2 cup chopped nuts
1 cup raisins
1/2 cup coconut
2 cups grated apple
6 eggs
2 tsp. vanilla
2 cups oil (I usually substitute 1 cup with apple sauce, mashed banana or plain yogurt)

Directions:
Directions:
Blend flour, brown sugar, baking soda, cinnamon and salt together. Stir in grated carrots (or zucchini or combination), chopped nuts, raisins, coconut and grated apple. In a separate bowl, mix eggs, vanilla, oil (I usually substitute 1 cup with apple sauce, mashed banana or plain yogurt). Stir wet mixture into dry only until all is blended. Bake at 350ºF for 20 minutes. Makes 2 dozen. Freeze well.
