1 can refried beans
Tabasco sauce
1 large clove garlic, minced
1/2 medium onion, diced
1 little can diced green chili
Dash of cumin
salt and pepper, to taste
3/4 cup grated cheddar cheese
1 cup of sour cream
8 ozs guacamole (my recipe is in Appetizers)
3/4 cup grated Monterrey jack or Mexican cojita cheese
1/2 can of black olives (chopped)
6 ozs pico de gallo
3 Tbsp chopped jalapeno

Directions:
Directions:
In a large pan on the stove, heat a tablespoon (and a bit more) of oil. Cook the garlic and onions until onion is soft and translucent. Add the refried beans, a few dashes of Tabasco, the green chili, the very little cumin and the salt and pepper. Let the mixture cool a few minutes while you grate the cheeses.

Spread the bean mixture in a rounded bowl or on a platter. Next, layer the cheddar cheese. Then layer the sour cream. The next layer is guacamole, and then the Monterrey jack cheese. Sprinkle black olives and spread some pico de gallo. If you feel brave, sprinkle the chopped jalapeno!

Always better with homemade everything, but I don't make my own refireds or pico de gallo. Easiest thing to do for the pico is to get some from your favorite Mexican restaurant . . . or from a BFF who makes her own!
