1 c butter
1 c sugar*
1 c brown sugar*
2 eggs
1 tsp vanilla
1 1/2 c flour
1 tsp salt
1 tsp baking soda
3 c quick-cooking rolled oats
2 c raisins
Optional:
- 1 c pecans or walnuts
- 1 Tbsp cinnamon
- 1-2 Tbsp milk
*can use any mix of white, light brown, and dark brown sugar.

Preheat oven to 350º. Cream butter and sugars. Add eggs and vanilla and beat well. Add flour, salt, baking soda (and cinnamon if using) and mix well. Stir in oatmeal, raisins (and nuts if using). Shape dough into 1 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten slightly. Bake for 10 to 12 minutes or until medium brown. Cool for 1 minute before removing from cookie sheet to wire rack. Cool completely.

From my friend Leslie, these are excellent as-is.
Variations:
- I usually add cinnamon and nuts
- I always use old fashioned oats with good results
- Once I added a little milk to the batter, used 2 c Dark brown sugar (no white sugar) in addition to cinnamon/nuts and added some milk to the batter. They were dense, moist, dark, spiced flat cookies (amazing). Made them again immediately afterwards same way except 2c light brown sugar (no white sugar) and no milk, they came out lighter in color and puffier in texture, also amazing.
