1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs beaten
1 tsp. vanilla
1 3/4 cup flour
1 tsp. salt
1 tsp. soda
3 cups oatmeal
may add 1/2 cup nuts - Mom usually didn't

Filling
1 lb. cut up pitted dates
1 cup orange juice
1 cup sugar

Directions:
Directions:
Cook dates, sugar, and orange juice until thickened. Cream shortening and sugar. Beat in eggs and vanilla. Add flour, salt, and soda, and mix. Add oatmeal and nuts (optional). Make into balls, and flatten with fork (push very flat).

Bake 375º - 12 minutes. Watch closely - may need less time. Spread filling between two cookies.
