1 ripe banana
1 c old fashioned rolled oats (not quick or instant)
1 c frozen blueberries, thawed
1/4 c raisins
1/8 c pomegranate juice (or any juice, or water)
2 Tbsp finely chopped dates (Medjool if available)
1 Tbsp chopped walnuts
1 Tbsp goji berries (or dried cranberries)
1 Tbsp raw sunflower seeds
2 Tbsp ground flax seeds (or almond flour, coconut flour)

Preheat oven to 350º. Mash peeled banana in a large bowl. add remaining ingredients and mix thoroughly. Lightly wipe an 8x8 inch pan with olive oil. Spread mixture in pan. Bake for 25 minutes. Cool on wire rack and cut into bars. Refrigerate any leftovers.

For my 9x9 pan need to increase all ingredients by 25% (or more, and just cut bars smaller). This is a beautifully moist and flavorful bar, but must be stored in fridge and is not very 'sturdy'. Might try using more oats next time, maybe add some chia seeds to see if I can make it easier to handle and transport.
