4 baking potatoes
1 c. sour cream or tater topper
2 T thinly sliced green onion
1 c. shredded cheese
1/2 c. diced cooked bacon or ham
Salt and pepper to taste

Preheat oven to 350 º.

Rub potatoes with olive oil and roll in kosher salt. Bake on aluminum foil in heated oven until potatoes are soft inside (about 1 hour). Allow to cool for 10 to 15 minutes

Cut tops of potatoes. Be careful to not puncture the skin. Scoop potato out of the shells and place in a mixing bowl.

Mash the potatoes; add sour cream, cheese, onion, and bacon / ham until mixed together. Season to taste.

Place mashed potatoes back into shells. Place filled shells on a foil covered cookie sheet and bake at 350º for 30 minutes or until heated in the middle. Right before serving, sprinkle with more shredded cheese and a little paprika.
