4 boneless skinless chicken breasts, cut into strips
1 cup sliced mushrooms
1/4 cup minced onion
2 Tbsp. butter, divided
1 cup white wine
1 cup heavy cream
1/4 tsp. black pepper
1/4 tsp. garlic powder
8 oz. spinach fettuccine, cooked al dente
1/4 cup Parmesan cheese
1 cup mozzarella cheese

Preheat oven to 350º. Saute chicken, mushrooms and onion in 1 Tbsp. butter in large skillet. (If using canned mushrooms, add with the wine). When chicken is tender and slightly browned, add the wine. Cover skillet and simmer until almost all the liquid is cooked away. In a small saucepan, scald cream and add 1 Tbsp. butter, pepper and garlic powder. Stir until blended. Place fettuccine and Parmesan cheese in a 2-qt. casserole dish. Pour cream mixture over the fettuccine; add the chicken mixture. Sprinkle with mozzarella cheese. Bake until cheese is bubbly and slightly brown, about 20-25 minutes.
