2 Goya Lady Fingers packages (40 oz total)
2 Del Gioso Marscapone Cheese, softened (16 oz total)
2 c instant coffee (1 1/2 Tbsp coffee to 8 oz water)
6 eggs, separated
1 c sugar
4 Tbsp Cognac
1/4 c unsweetened cocoa
1/4 tsp cream of tartar

Make 1 day ahead:
Combine egg yolks, 4 Tbsp coffee, sugar in double boiler, then add cognac for 2-3 minutes. Add softened marscarpone cheese, beat 3-5 minutes. In another bowl, beat egg whites, 1 tsp sugar until stiff peaks start to form, then add 1/4 tsp cream of tartar.
Gently fold egg whites into marscapone mixture.
In a separate bowl place the rest of the coffee Dip one side of lady finger in espresso, layer on the bottom of 9x13 or 8x11 pan with wet side up. Layer 1/2 of the cheese on top. Sift Cocoa powder over. Repeat layers.
Refrigerate for 1 day.
