Ingredients: 5 lb. Large baking potatoes (1 for every 1-2 people) 1 lb. bacon, cooked crisp, drained and crumbled 1 large onion, chopped fine 2 C Sharp cheddar cheese, grated extra grated cheese for topping, if desired 1 stick of butter or margarine, softened milk, amount varies with potatoes salt and pepper to taste

Directions:Clean potatoes well, prick with a knife or large fork. Bake at 350º until done (test with a large fork). This will take 1- 1 1/2 hours depending on the size of the potatoes. Cool.
After cooled, cut in half length-wise so the flat sides can lay down. Scoop out cooked potato with a large spoon, placing it into a large mixing bowl. Arrange potato skins on a cookie sheet (lining with foil first makes clean-up easier).
Mash potatoes, adding softened butter and then milk. Start with about 1 C of milk, add in increments until nice and fluffy. Add salt and pepper to taste. Mix in onion, cheese and bacon.
Stuff the potato skins, top with grated cheddar cheese if desired.
Bake at 350º until hot, about 20 min if at room temp, longer if made ahead and refrigerated. |

Notes: This is a great dish for holidays or guests, they are delicious and can be made ahead! If making ahead of time, add a little extra milk for moisture.
