1 1/2 c dried red lentils
4 c water
1/4 c olive oil
4 large garlic cloves, minced or pressed
1 large minced fresh chile, seeded for a milder 'hot'
3 Tbsp red wine vinegar
3/4 tsp salt
1 c minced red bell peppers
1/4 c chopped fresh cilantro
1 large celery stalk, minced (optional)

Wash the lentils and place them in a saucepan with the water. Cover and bring to a boil on high heat. Reduce the heat and simmer for 10 to 15 minutes, or until the lentils are just tender. Be vigilant when using red lentils, they cook much faster than brown lentils and its easy to overcook them. Drain and set aside in a serving bowl.

While the lentils are cooking, heat the oil in a small skillet. Add the garlic and chiles and saute on med heat, stirring constantly, for about 2 minutes. Place in a cup or small bowl, stir in the vinegar and salt, and set aside.

To the bowl of lentils, add the bell peppers, cilantro, and the celery if using. Add the dressing and toss gently. Serve at room temperature or very cold.
