Single Batch Dough (triple batch amounts):
2 1/4 c. flour (6 3/4 cups)
2 eggs (6)
1/4 c. water (3/4 cup)
1 T. oil (3 Tbsp)
1 tsp. salt (3 tsp)

Filling
4 lbs. ricotta cheese (when making 1 triple batch)
6 eggs
1/2 cup chopped parsley
2 tsp granulated garlic
2 tsps salt
1 tsp pepper

Dough:
-Mix flour, eggs, water, oil, & salt until it forms a ball.
-Knead on lightly floured counter, you may need to add more water.
-Place under bowl to let it rest. at least 25 min.making sure to bless the dough by making the sign of the cross on it.

Filling:
-crumble ricotta with potato masher
-mix all ingredients together

-Roll out dough on pasta machine on setting 5.
-Place on floured surface & slightly roll dough so that it is slightly wider.
-Place medium size scoops of filling mixture in a row on dough.
-Fold dough over filling.
-Press down dough around filling.
-Cut out individual ravioli's with ravioli cutter, then crimp edges with the tines of a fork.
-Place on floured cookie sheet & freeze.

To cook:
-Place in salted boiling water for approximately 10 minutes
