Fudge Covered Homemade Marshmallows Recipe

Marshmallow:
2 c. sugar
1/2 c. corn syrup
1/2 c. cold water
1/4 tsp. salt.
2 T. + 1/2 tsp. gelatin
2 egg whites
3/4 tsp. vanilla

Fudge:
2 2/3 c. sugar
1 1/2 sticks butter, melted
7 oz. evaporated milk
12 oz. semi-sweet chocolate chips
7 oz. marshmallow cream
1/2 tsp. vanilla

Marshmallow:
-In medium pot; mix 2 c. sugar, 1/2 c. corn syrup, 1/2 c. cold water & 1/4 tsp. salt - cook until mixture reaches 240º.
-In small bowl mix 2 T. warm water (115º) & gelatin
-In mixing bowl (or KitchenAid mixer), beat 2 egg whites to stiff peaks.
-When syrup reaches 240º, remove from heat, add gelatin, & mix.
-While beating egg whites, pour syrup slowly into egg whites, add vanilla & beat on high for 10 minutes.
-Spray a 9x3" pan & parchment paper with cooking spray.
-Add marshmallow to baking dish.
-Put parchment on top of marshmallow & flatten with hands.
-Leave out overnight.
-Remove paper, sprinkle with corn starch, flip out on cutting board.
-Using a pizza cutter, cut into 1x1 in. squares & dust with cornstarch.

Fudge:
-In deep pot, mix sugar, butter, & evaporated milk & cook to 234 º.
-Remove from heat & add semi-sweet chocolate chips & mix until melted.
-Add marshmallow cream & mix well.
-Add vanilla, mix well.
-Using wooden skewers, dip marshmallow quickly into fudge & place on parchment paper to dry overnight.

When dipping the marshmallows, it helps to keep the pot on a warming tray as well as to keep some extra warm evaporated milk on hand to add to the fudge to keep it thin enough to dip.
