1 qt. beans
1 lb. pork

Directions:
Directions:
Put beans in cold water, and hang over fire the night before they are baked.
In the morning, put beans in a colander, and rinse two or three times, then put in a kettle with pork.
Cover pork and beans with water, and keep scalding hot, for an hour or more.
After hour, slash the rind of the pork and sprinkle a little pepper among the beans.
Cover pork and beans again with water, and sink pork a little below surface of beans.
Put kettle back over fire and cook three or four hours.

Makes about 20 rations.
