1 possum
Salt
8 sweet potatoes
2 tbs. butter
1 tbs. sugar
4-6 strips bacon
1 tsp. thyme, marjoram or both
Pepper, red or black, ground

Directions:
Directions:
Skin, clean and wash possum well.
Salt the possum well inside and out.
Start a pot of boiling water and add butter and sugar and 8 peeled sweet potatoes.
While boiling sweet potatoes tender, stew the possum tender in a tightly covered pan with a little water.
When tender, arrange the potatoes around the possum, strip with bacon, sprinkle with thyme or marjoram, or with pepper, and brown in the covered pan over the fire. Baste often with the drippings.
Remove from fire when crispy. Serve hot.

Makes about 20 rations.
