1/4 c old fashioned rolled oats (not quick)
1/4 c pomegranate juice
1 c fresh or frozen blueberries
1 Tbsp chopped walnuts
OPTIONAL:
1/2 Tbsp raw sunflower seeds
1 Tbsp dried currants, raisins, cranberries, or goji berries
1 banana, sliced
1 Tbsp chia seeds
VARIATIONS:
- bright tangy flavor: oats, water, juice and peel of 1/2 lemon, diced nectarine, blueberries

Directions:

Combine all ingredients in a small microwave proof bowl. Cook for 3 minutes in microwave on high.

Combine and soak overnight to soften oats. Grab and go (eat cold).
