1 lb. lean ground beef
1/2 package Birdseye SteamFresh frozen mixed vegetables (dice carrots)
1 8 oz. package shredded cheddar cheese
1/2 cup chopped onion
garlic salt and pepper to taste
1 package Bob Evans mashed potatoes-2 individual serving size

Directions:
Directions:
Preheat broiler. In a large skillet brown ground beef with onions until onions are clear. Add mixed vegetables and cook until heated through. Stir in 3/4 of the cheese and stir until melted.and add garlic salt and pepper. Heat mashed potatoes according to directions for microwave. Put beef mixture in a 2-quart casserole dish and top with mashed potatoes and sprinkle with remaining cheese. Broil for 2-3 minutes until cheese is melted.
