1/3 c honey
2 Tbs lemon juice
3 Granny Smith or Rome apples, cut into 8-10 wedges
3/4 c sugar
6 Tbs margarine, softened
1/4 c packed dark brown sugar
1 tsp vanilla
2 eggs
1 c flour
1 tsp baking powder
1/4 tsp salt
cinnamon sugar mixture

Directions:

Preheat oven 350º. Grease 9" pan. Combine honey and lemon juice in a large skillet and bring to simmer over medium heat. Add apples and cook 12-14 min until almost tender, stirring to coat. Remove skillet from heat.

In mixer, combine sugars, margarine, and vanilla. Add eggs and beat. Gradually add flour, baking powder, and salt. Pour into pan. Arrange apples on top in spoke-like design. Sprinkle with cinnamon sugar. Bake 1 hr.
