5 leaves romaine lettuce
4 oz mesclun or spring mix lettuce
1 1/2 c (less) shelled edamame
1 c grape tomatoes, halved
1/4 tsp coarse sea salt
1/3 c extra-virgin olive oil
2 Tbs balsamic vinegar
3/4 tsp fresh thyme
1/4 tsp cayenne pepper
1/4 tsp black pepper
less than a handful of salted soy nuts

Directions:
Directions:
Shred romaine lettuce. Add mesclun or spring mix, edamame, and tomato halves. sprinkle with sea salt. Mix together olive oil, balsamic vinegar, thyme, cayenne pepper, and black pepper. Pour Dressing over salad and toss to mix. Sprinkle in soy nuts.
