1 Tbs margarine
1 Tbs olive oil
1 large onion, chopped
2 lbs carrots, peeled and coarsely chopped
2 large Yukon gold potatoes, peeled and diced
5 to 6 c chicken or vegetable stock
1/2 soy milk
1/4 c chopped fresh dill weed
1 tsp salt
1/4 tsp pepper

Directions:
Directions:
Heat margarine and olive oil in a large pot and saute onion. Add carrots and potatoes. Cook for 15 - 20 min, stirring occasionally. Add 5 c broth and bring to a boil. Reduce heat to low and simmer, covered, for 30 - 40 min or until carrots are tender. Puree. Add soy milk and seasonings and simmer 5 min.
