2 lb lean hamburger meat (the leaner the better)
1/2 cup soy sauce
1/3 cup liquid smoke (hickory)

Mix meat ingredients together and chill several hours to let the flavors blend. To shape the strips, I use a cake spatula to mash walnut size balls of the mixture and keep folding back the extra until the fibers of the meat hold firm. Scrape the strip off with a spatula and place on the dehydrator shelf. it usually takes all day or overnight to dry well. If your meat was a little fat, you can pat with a paper towel while it is hot from the dehydrator. Enjoy and think of your Grandmother. Sprinkle with pepper flakes or add tobasco if you want it hot. But, watch it, the drying makes the flavors very intense.
