1 lb. can cooked chicken breast meat (drained) or
1 grocery store rotisserie chicken de-boned
1 1/2 c. instant rice
1 c. chicken broth
1 can cream of chicken soup
12 oz. bag frozen broccoli (cooked)
1/2 c. chopped onion (optional)
1 Tb. butter or olive oil
1 c. of grated cheddar cheese

Directions:
Directions:
Preheat the oven to 350 degrees F. Butter or spray a 9 x 13 inch baking pan with non-stick spray.

Add the rice, broccoli, cheese. chicken broth,soup and onion, and the chicken. Mix well and turn out into the prepared casserole dish.

Omit the chicken to make it a simple layered Broccoli and Rice Casserole.

Bake at 350º for 30 minutes.
