4 lbs beef brisket
1/2 to 3/4 pkg onion soup mix
1/4 to 1/2 cup water

Sauce:

1/2 lb. mushrooms (sliced)
3 T butter
1/2 to 3/4 cup dry white wine
3 T flour
1 cup water
1 T tomato paste
1 1/2 cups skimmed juices from brisket
2 beef bouillon cubes

Directions:
Directions:
Sprinkle soup and water over meat first and place beef on 2 layers of heavy duty aluminum foil. Seal tightly. Bake 4 hours at 300 degrees. Refrigerate overnight.

SAUCE:

Sauté mushrooms in butter and add wine. Simmer until reduced by 1/2. Blend flour with 1 cup water until smooth. Stir into mushrooms, add last ingredients and simmer. Sauce should be thin.

While cold, slice meat against grain and arrange in oven-proof pan. Pour sauce over meat and bake 1 hour at 300º.
