2 1/4 c flour
1/4 c brown sugar
4 tsp baking powder
1 1/2 tsp cinnamon
1 tsp allspice
1/4 tsp salt
1/4 tsp ginger
4 eggs, separated
2 c milk
1 c pumpkin
1/4 c butter - melted

Directions:
Directions:
Combine 1st 7 ingredients in a large bowl. Combine egg yolks milk, and pumpkin. Add to flour mixture, stirring just until moistened. Stir in melted butter. Set waffle batter aside.
Beat egg whites at high speed with an electric mixer until soft peaks form, gently fold into batter. Bake in a preheated oiled waffle iron until crisp.
