2 c sugar
1 c butter or margarine
4 eggs
3 c sifted flour
1 tsp salt
1 1/2 tsp baking soda
1 c buttermilk
1/4 c orange juice
grated rind of 1 orange
1 c chopped nuts
1 c chopped dates
1/4 c chopped nuts for top of cake

Optional Glaze:
1 c orange juice
grated rind of 1 orange
1 c sugar

Directions:
Preheat oven to 350 degrees. In a large bowl, cream sugar and butter together. Add eggs one at a time, beating after each addition. Blend flour, salt, baking soda, and sift together. Add buttermilk and orange juice alternately to egg mixture. Fold in orange rind, nuts, and dates (which have been dredged with flour) to the batter. Pour into greased and floured pan, making one angel (or bundt) cake pan or two loaf pans. Bake at 350 degrees for one hour.

Remove from the oven. Let cool for 20 minutes and turn out on rack. While still warm, pour a glaze of 1 grated orange rind, 1 cup sugar, 1 cup orange juice heated until sugar dissolves, over cake's top and sides. Sprinkle reserved nuts over top of cake.

Lisa's notes: Delicious! Careful not to over-bake, check 10 minutes early. I substituted coconut flour and almond flour for half of the regular flour and reduced sugar to 1 1/2 c. This is plenty sweet. For the glaze I did 3 Tbsp butter, 1/2 c sugar, juice and peel of 1 orange. I got raves for the Bundt cake version (shown in picture) at a recent party.
