1 box lemon cake mix
2 eggs
1/3 cup vegetable oil
1 tsp. lemon extract (or 1 T. fresh lemon juice and zest of one lemon)
powdered sugar

Pour cake mix into bowl, add eggs, oil and lemon. Mix until well blended. Drop teaspoonfuls of dough into powdered sugar (this dough is EXTREMELY sticky I made balls and them dropped them into sugar) roll them around until they are lightly covered. Once sugared, put on an ungreased cookie sheet (I used a silpat or parchment paper)

Bake at 375º for 6-9 minutes. The bottoms will be light brown and the insides chewy.

The recipe says that it will yield 6 dozen, but they must be smaller cookies than I make!
