1 cup vegetable oil
2 cups granulated sugar
3 eggs beaten
3 cups all purpose flour
1 tsp. baking soda
2 tsp vanilla extract
1 cup pecans, chopped (use pecan halves not pecans that have already been chopped)
3 cups peeled chopped fresh apples

FROSTING

1 stick of butter
1 cup light brown sugar
1/4 cup evaporated milk
1/2 tsp. vanilla extract

Preheat the oven to 350 degrees. In a large bowl mix the oil, sugar, and eggs. Gradually add the flour and baking soda. Add the vanilla, spices, pecans, and apples. Spread into a greased 13 X 9 inch pan. Bake for 45-50 minutes or until a toothpick comes out clean.(do not over cook). Let cool in the pan.

FROSTING

Boil the butter, brown sugar, milk, and vanilla in a sauce pan for 2 minutes. Set the pan in cold water and beat the icing until spreading consistency. Spread the frosting over the cake before serving.
