Crust:
1 c. flour
1/3 c. powdered sugar
1 stick of butter

Filling:
2 eggs
1 1/2 c. sugar
1/3 c. flour
3/4 tsp. baking soda
1/4 tsp. salt
3 c. rhubarb

Directions:
Directions:

Crust: Mix together and press in bottom of 9x9 pan. Bake at 350º for 15-20 minutes or until it starts to brown slightly.
Filling: Beat eggs with sugar. Add flour, baking powder and salt. Stir in rhubarb. Pour over baked crust and bake for an additional 35-45 minutes, or until set and browned.

To make Lemon Bars, use the same crust, but the filling is 2 eggs, 1 c. sugar, 2 Tbsp. flour, 3-4 Tbsp. lemon juice and some peel, and 1/2 tsp. baking powder. Bake at 350º for 25 minutes.
