2 pounds chocolate (53%-60% cocoa mass)
1 pint heavy cream
4 oz. unsalted butter
2 tablespoons liquor of choice

Directions:
Melt 1 pound of chocolate in the microwave, a minute at a time. Put cream in heavy skillet. Boil 5 minutes. Chop butter in small pieces. Measure liquor (Raspberry Chamboard is good) in large bowl. Take cream off heat, stir in chocolate and pour into bowl with liquor. Blend thoroughly. Add chopped butter. Stir in with a whisk. Put in freezer until it's ready to be worked with (at least 3 hours). Scoop out with melon ball scooper. Put balls on waxed paper and put in freezer again. To coat with chocolate, melt another pound of chocolate in microwave (1 minute at a time until well melted). Use bamboo skewer to dip truffle in chocolate. Set on waxed paper. If desired, melt some white chocolate and make fling marks on truffles.
