Ingredients:
Ingredients:
2 Tbsp extra virgin olive oil
2 c chopped onions
1 quart vegetable broth. *Imagine brand No-Chicken broth is best. Can use real chicken broth for non vegetarians
6 c coarsely chopped cauliflower (1/2 large head)
1 tsp salt
3 c chopped watercress, thick stem ends removed*
ground black pepper

*thick stems are bitter. Add watercress to taste, I use one big bunch for a double recipe.

Directions:
Directions:
In a soup pot on low heat, warm the olive oil. Add the onions and cook, stirring occasionally, until softened but not browned, 5 to 10 minutes. Add the broth, cauliflower, and salt and bring to a boil. Reduce the heat and simmer covered until the cauliflower is very tender, about 15 minutes.

Remove the pot from the heat and stir in the watercress. In a blender, puree the soup in batches until smooth and uniformly bright green. Season with black pepper to taste.
