6 medium shrimp, peeled and devein
2 ounces Vietnamese rice noodles
6 rice-paper round(7 1/2 or 8 inches
6 fresh Vietnam basil leave
6 fresh mint leaves
3 red- leaf lettuce or spinach

Directions:
Directions:
Bring a medium saucepan of water to boil, add rice noodles and cook for 3 to 4 minutes until tender; drain and rinse with warm water. Fill big bowl with hot water. Dip one rice wrapper in hot water for 2 seconds to soften. Lay wrapper flat on cutting board and add basil, mint lettuce, cilantro, rice noodles and shrimp leaving 1 inch on each side. Fold uncovered sides inward. Repeat with the rest.

Dipping sauce
Mix hoisin sauce and peanuts into small bowl and stir up about 30 second and ready to serve.
