2 cups Cap'n Crunch cereal
1 1/2 cup Corn Flakes
1 egg
1 cup all- purpose flour
1 tsp onion powder
1 tsp garlic powder
1/2 tsp pepper2 lbs chicken breast- cu in 1 0z. tenders
vegetable oil- for frying

Creole Mustard Sauce

1 cup mayonnaise
1/4 cup creole style mustard (Dijon is fine too)
1tbsp yellow mustard
1tbsp horseradish
1/2 tsp cider vinegar
1 dash Worcestershire sauce
1 tsp red wine vinegar
1 tsp water
1/2 tsp cayenne pepper
1/2 tsp salt
1 tbsp green onion- sliced in 1/4 " pieces
1 tbs crushed garlic packed in oil
1 tsp chopped green pepper(fine)
1 tsp finely chopped celery
1 tsp chopped onion-- Mix all together. Makes about 1 1/2 cups

Crush the cereal. Set it aside. Beat the egg with the milk. set aside. Stir together flour, onion, garlic powder, and black pepper. Set aside. Dip the chicken into the egg wash, coating well, then dip into the flour. Move around to coat well & shake off excess. Dip into the egg wash, then dip into the cereal mixture, coat well. Heat oil in a large, heavy skillet to 325 º. Drop coated chicken carefuly into the hot oil and cook until golden brown: 3 to 5 minutes depending on the size of the tenders. Drain and serve immediately with the Creole mustard sauce.

Absolutely outstanding when served with the Creole mustard sauce!

The Sauce I Used:

1 cup mayo
4 tbsp honey
2 tbsp mustard( any kind...the fancier the better)
Blend and serve
