1 tbsp olive oil
1 tbsp minced garlic
1 cup chopped red onion
1 lb brussels sprouts, rinsed, cut in half
1/2 cup vegetable, chicken or beef broth
2 tbsp Dijon mustard
Fresh ground black pepper

Directions:
Directions:
In a large frying pan, heat oil over med-low heat. Add garlic and onion and saute for 1 minute. Add sprouts cut side down, cover and cook about 5 minutes. Add 1/4 cup stock, stirring to pick up brown bits. Cover and cook for an additional 10 minutes until slightly charred and tender. Remove sprouts to platter and stir in remaining 1/4 cup stock and mustard. Reduce heat and cook until slightly thickened, then drizzle over sprouts and sprinkle with pepper.
