1 1/2 c flour
1/2 c cocoa
1/2 tsp baking soda
1/2 c sugar
1/2 c brown sugar
1/2 c butter
1/4 c peanut butter
1 tsp vanilla
1 egg

3/4 c peanut butter
3/4 c confectioners sugar

Preheat oven to 375º
In a small bowl combine flour, cocoa, and baking soda. Blend well. In a large bowl beat sugars, butter, and 1/4 c peanut butter until light and fluffy. Add vanilla and egg, beat well. Stir in flour mixture until blended, set aside. In small bowl, combine filling ingredients, blend well. Roll into 30 one inch balls.

For each cookie: shape about 1 tablespoon of dough around 1 peanut butter ball, covering completely. Place 2 inches apart on ungreased cookie sheet. Flatten with the bottom of a glass dipped in sugar. Bake in a 375º oven for 7 to 9 minutes or until set. Cool on wire racks.

NOTE: pipe a Christmas tree design with a sugar glaze (thick mix of confectioners sugar with 1 Tbsp milk), or ice with chocolate glaze.
